GAZPACHO OF WHITE GARLIC AND/OR TOMATO:
WHITE GARLIC
INGREDIENTS (4 persons)
– 200 g of raw almonds
– A piece of bread
-6 tablespoons of virgin olive oil
– 6 tablespoons of sherry vinegar
-1 small clove of garlic
– 1 ½ litre of water
– salt
-10-15 black olives chopped serpis
ELABORATION:
Crush the almonds, mix with the rest of the ingredients and go through the blender, it must be a thin cream, if it is too brothy add a little more bread, let it soak and go through the blender again. Rectify salt and vinegar. Serve with black olives.

– 1 kg of ripe tomatoes
– 1 green pepper
– 1 cucumber
– 6 tablespoons virgin olive oil
– a pinch of scallion
– 1 small clove of garlic
– pinch of cumin (optional)
– slice of bread
– ½ glass of water
– Sherry vinegar ( to taste, incorporate when taking to the table)
– salt
– 10-15 chopped green olives
TOMATO GAZPACHO:

Wash and split the vegetables, mix all the ingredients, let stand in the fridge and go through the blender and the Chinese. A light cream should remain, if necessary add a little more water. Serve with the green olives.
